Fried chicken with mushrooms and blueberries
Some good ingredients to turn this dish into a refined dinner, despite the ease of cooking. Blueberry gives a light sweet taste mushroom sauce with mustard, and all of this goes well with a rice side dish.

Ingredients

  • Chicken thigh

Ingredients simple and affordable. On the side I suggest to cook the rice.

In this recipe I use rice AMBER from TM Mistral. It's parboiled long grain rice in bags. Put to cook the rice in boiling salted water. This kind of rice cooks 30 minutes

Pile the flour in a shallow dish, season with salt and pepper. Roll the thighs in breadcrumbs, shaking off any excess flour. Basically, no matter what part of the chicken to use.

Heat the oil in a frying pan. Put the chicken, reduce heat to medium and cook until bottom is not formed a Golden crust. Flip, cover and cook for 10 more minutes to the other hand, it was the same crust, until tender.

Meanwhile in a pan put the chopped bacon and fry a couple of minutes, add the sliced mushrooms and cook, stirring, for another few minutes

Put in a pan the mustard, quickly and thoroughly mix it with the mushrooms and bacon. Add salt, pepper.

Gently stir in the blueberries. I use frozen berries.

Add the lemon juice, stir and remove pan from heat before the berries begin to soften.

Meanwhile, cook the rice. Remove bag with a fork, open it and pour the rice on a plate.

Serve the dish to your liking.
