Cooking
Remove the chicken from the refrigerator, soak it up a bit at room temperature.
From lemon halves and squeeze the juice. Prepare the filling: combine salt, pepper, 2 tablespoons of olive oil and lemon juice, mix well. The chicken carcass "to redeem" in lemon and olive oil dressing.
The other half of the lemon cut in half. Be placed inside the carcass all the pieces of lemon.
Large onion cut into rings.
In a small baking pan with high sides lay a sheet of foil, drizzle with olive oil, put onions, then chicken, pour remaining dressing and bake in a preheated 200 degree oven for 30 minutes (the time depends on the size of the chicken, I got a little - "the gherkin").
Peel the onion and finely chop. Heat in a heavy saucepan the remaining olive oil and fry the onion until transparent. To the onions add the rice, stir and slightly warm. Pour hot chicken broth, cover and cook on a slow fire.
Shred cabbage, not too finely.
When the rice is almost ready, add to the pot of cabbage and spinach, mix well and let the cabbage and spinach swim.
Nuts slightly dry to dry pan.
Cooked rice with cabbage and spinach out onto a plate, add the pine nuts and mix well. Sprinkle the chicken.
