Cooking
Rabbit liver clear from the films and soak in milk for 1-2 hours.
Remove the livers from the milk and to scroll in a meat grinder (fine grid) with one onion. Season with salt and pepper, add the egg and corn starch. Mix well.
In a pan heat clarified butter and with a cooking ring of a small diameter to spread the dough and bake cakes, fried them on both sides for 2 minutes.
Add all liver pancakes in refractory form and put in the oven, preheated to 160 degrees for 15-20 minutes.
Pumpkin flesh cut into small cubes and fry in a pan with melted butter and lightly sprinkled with sugar for 10-15 minutes. On this same pan fry the apples, cut into rings (or cube), as well in melted butter and lightly sprinkled with sugar. The rest of the onion thinly slice and disassemble the ring. Toss rings in flour and quickly fry in deep fat, spread on a paper towel.
Put on a plate of warm pancakes, alternating with slices of apples, sprinkle the pumpkin and onion rings.
