Some handyman woke up my husband when he brought home several pounds of tomatoes - now we have the house starting tomato days))) the Pancakes are fully cooked on the recipe by himself just a pinch of Basil, which, I think, the tomatoes are always good. But I would have the recipe slightly changed. Post the original version with my comments. Hope you like it!

Cooking
Tomatoes peel and cut into cubes. Recline in a colander to stack the extra juice. In order to more easily remove the peel from tomatoes, they can be briefly dipped in boiling water.
Mint grind, leaving a little for decoration.
Mix tomatoes, onion and mint. Add salt, sugar, pepper, and Basil. Stir. You can add 100 gr of grated Adyghe cheese.
To vegetable mixture add flour. Next time I will put less flour - 180 grams.
With a spoon spread the batter into a pan greased with olive oil. Fry pancakes with two sides until Golden brown.
Serve with sour cream, garnish with mint. Bon appetit!!!
