Ingredients

  • Pumpkin

For this recipe we will need 1 Cup of a mixture of rice and quinoa "Quinoa and basmati rice Mix" from TM Mistral.

It should cook in boiling, salted water until tender.

Cut into small pieces pumpkin, mushroom and chilli.

Chop the tomatoes, garlic and onions.

On a heated with olive oil pan fry the pumpkin, onion, mushrooms, chilli and garlic.

Add a small amount of water and simmer until tender.

Season with salt and pepper, add the herbs and blend with a blender.

A mixture of rice and quinoa to serve with pumpkin sauce, garnished with parsley.
