Vegetable a La risotto with leeks, spinach and peppers
Very simple but tasty and vibrant dish that was born thanks to the post. Why "a La risotto", because this meatless version is made without meat broth, wine and Parmesan cheese, and the consistency of the risotto is maintained through the gorgeous rice "Arborio". The piquancy of chili pepper combined with pepper and spinach create a unique, interesting blend together with the rice, which I want to try again and again.

Onions, leeks (including green part) cut into half rings, finely chop the garlic, chili pepper clear from the seeds and also finely cut into half rings.

Heat oil in a large frying pan and fry the onions on medium heat until soft.

And garlic. At this point begins a unique flavor from the garlic and chilli ...... All is well and fry for 2-3 minutes.

and add to the frying pan to the onions. Mix well until, until the rice will become crumbly. It takes about 5 minutes.

After that pour 2 tbsp. of hot water, add spices, stir the rice to evenly distribute in the pan, reduce heat, cover and, stirring occasionally, cook for 10 minutes, until the rice is almost not absorbed all the liquid. Then add the remaining water, i.e., 1.75 cups, and continue to cook until water absorption. Why 1.75 cups? Because the remaining 0,25 of liquid the rice will get from spinach and bell peppers.

While preparing the rice, prepare the spinach and bell pepper. Pepper cut into small cubes

clean the spinach from stems, wash well and cut into small slices. If the spinach is small, you don't have to cut.

Once the rice is second time I absorbed the liquid, it is necessary to add bell pepper. All again very good stir and let stew under the lid for 3 minutes

then add the spinach, everything is very well mixed, cover and let stew for 3 minutes, then put out the fire
