Meatballs eggplant
Vegetable meatballs with eggplant, onion and greens for a change to the summer menu!

Ingredients

  • Eggplant

    3 шт

  • Onion

    1 шт

  • Garlic

    3 зуб.

  • Vegetable oil

    2 ст. л.

  • Parsley

    4 веточ.

  • Cilantro

    1 ч. л.

  • Salt

  • Black pepper

  • Chicken egg

    1 шт

  • Bread crumbs

    6 ст. л.

Cooking

Eggplant wash, cut into cubes, add a generous pinch of salt, cover with water and leave for 20-30 minutes. Then drain the water, wash the eggplant with cold water.

Finely chop the onion, fry in a pan until Golden brown.

Eggplant grind in a blender.

Add the minced eggplant in the frying pan to the onions. On low heat sauté, stirring occasionally, 15-20 minutes.

Add the chopped garlic, parsley and coriander. Mix well. season with salt and pepper.

Remove vegetable meat from heat and allow to cool.

In the cooled mince, add the egg and breadcrumbs and mix well.

Form small meatballs ( I got 19 pieces), and breaded them in breadcrumbs.

Put in a baking dish, greased with vegetable oil. Bake the meatballs at 180 degrees in preheated oven for 30-35 minutes until Golden brown.
