Lemon rice with chickpeas and cashews
Spicy, crisp, lemon rice with chickpeas. Very tasty and nutritious dish of Indian cuisine. Great for vegetarians and fasting.

  • Cashews

  • Vegetable oil

The chickpeas to soak for 8 hours. Cook for 1-1.5 hours.

Wash rice. Boil until soft 12-15 minutes. The remaining water to drain.

In skillet, heat oil and fry cashews for 1 minute.

Add spices and cook for another 30 seconds.

Add the rice, chickpeas, 0.75 boiling water, salt. Cook on low heat for 10 minutes.
