Vegetable stew with red currant
A simple vegetable stew... Yes not simple, but with currants)

Ingredients

  • Eggplant

    300 г

  • Tomato

    300 г

  • Pepper

    400 г

  • Mushrooms

    200-300 г

  • Red currants

    100-150 г

  • Peppers red hot chilli

  • Garlic

    1 шт

  • Tomato paste

    1 ст. л.

  • Vegetable oil

  • Sugar

    1 ч. л.

  • Spices

Free the freezer:) in addition to the above, you can use any favorite fresh or frozen vegetables.

Mushrooms wash, peel, cut into slices

In a saucepan with a small amount of vegetable oil (you can without), spread the veggies (I prefer frozen). Simmer for 5min. with the lid closed, then 10-15min. - without a lid. Separately fry the mushrooms

Prepare the tomato dressing: mix 1 tbsp of tomato paste, 1ch.l. without top sugar, spices (paprika, dried herbs...), vegetable oil (olive)

Add to stews, tomato dressing

Red currants (frozen and slightly thawed) to slightly mash these with a potato masher

Add it to stews and stew under the lid for 3-5 mins and turn off the heat.

A small head of garlic peel, finely chop and add to stew. And the hardest part of cooking to give the stew to stand for about 30 minutes...)
