Baked squash with quinoa and cranberries
Suggest you try a very interesting and delicious dish with zucchini and quinoa. Very fragrant, beautiful and hearty! Help yourself!

Ingredients

  • Zucchini

    1 кг

  • Quinoa

  • Olive oil

  • Parsley

    1 ст. л.

  • Soy sauce

    3 ст. л.

  • Allspice

  • Sauce

  • Pumpkin seeds

  • Cranberry

Cooking

Zucchini peel, cut into cubes. Pour olive oil and soy sauce, add dried chopped parsley and mix well.

Spread in a fireproof dish and put in preheated to 200C (400F) oven for about 30 minutes. The squash should be slightly soft.

It turns out to be ruddy and flavorful zucchini.

For cooking I used sowwy the sauce "Kikkoman".

Rinse quinoa in water, put in a deep pan, fill with water in proportion 1:2 and add Worcestershire sauce. Bring to a boil, reduce fire and cook until tender. All the water is absorbed. Quinoa cooks very quickly, 5-7 minutes after boiling.

Add pumpkin seeds and dried cranberries and stir.

In the end add the cooked zucchini, stir, cover and allow to stand for 5 minutes.
