Squash ragout in a cream sauce
A delicate, creamy ragout of zucchini with fragrant paprika. Delicious hot and cold form, exists as a completely independent course and may be in addition to garnish! The idea of the recipe thanks cook sergej_pozhar and his blog!

Ingredients

  • Zucchini

    2 piece

  • Onion

    1 piece

  • Pepper

    1 piece

  • Tomato

    2 piece

  • Garlic

    3 tooth

  • Parsley

    4 sprig

  • Salt

  • Peppers red hot chilli

    1 tsp

  • The mixture of peppers

  • Paprika sweet

    1 Tbsp

  • Sour cream

    200 g

  • Flour

    1 Tbsp

  • Water

    120 ml

  • Vegetable oil

    2 Tbsp

Cooking

Onion cut into small dice. In a pan heat the vegetable oil and bring the onions on low heat until transparent. Add the paprika, stir, add 60 ml of water.

Add chopped large pieces of bell pepper, mix well. Simmer, stirring occasionally, until soft pepper.

While stewed peppers, slice the zucchini and tomatoes in large pieces.

Chop the garlic and parsley.

For the sauce in a small bowl, mix the flour and 60 ml of water.

Add sour cream and mix well until smooth.

When the pepper is almost ready, add the zucchini. Add salt, red chilli and pepper mixture (spread the spice and adjust to your taste). Mix well. Simmer 5-6 minutes, the squash should be slightly crunchy.

Then add the tomatoes, stir, simmer for 1-2 minutes.

Dressed with cream sauce, stir (the sauce begins to thicken) and let it boil.

Once the sauce is boiling, add chopped parsley and garlic. Stir, taste and adjust salt if necessary, remove from the heat.
