Pancakes can be not only a rich Breakfast or dessert, but also a gourmet dinner. In this recipe, all the flavors perfectly balanced. Duck on friendly terms with berry sauce. The gooseberry sauce was very rich, with a slight acidity and sweetness. And the addition of tomatoes in the batter for pancakes makes them even more delicious and bright.

Cooking
In a bowl break the egg, add salt and whisk
Pour the milk, stir whisk to avoid lumps
Grind tomatoes in blender and add to the dough.
Add 1 tbsp oil and the remaining milk
Fry pancakes with two sides
Gooseberries clean from the stems (in my case this was done before frozen berries). Put in a saucepan with the berries, dried herbs, cloves of garlic.
Add 30 ml water and tormented for 15 minutes.
Strain the resulting sauce through a sieve so that only the pomace of the grapes.
The sauce again put on medium heat, add a couple tbsp water. Tormented on low heat until sauce becomes thick. Sprinkle with salt and pepper while cooking to taste. At the end of cooking add balsamic vinegar and vegetable oil.
Duck breast fried in vegetable oil until Golden brown, then bring to readiness in the oven or on low heat. During cooking, sprinkle with salt and pepper to taste. Duck definitely need to rest before you slice. Duck should be pink and juicy on the inside.
Ready pancake spread thinly cut slices of duck breast and pour the sauce.
