A La Coca-Cola with their hands
Dear friends! I recently posted a recipe for homemade Fanta and promised the girls that I will try also to cook and Coca-Cola. Tried it and... were very pleased with the result. Really tasty, very refreshing summer drink without a single preservative and dye. The taste is certainly different from the store, but the similarity is present! Note all the well-known Cola in the drink features) Despite the many step by step photos and descriptions, in preparation of the syrup takes less than 30 minutes.

First prepare the color for Coca-Cola. Didn't want to use any dyes, so I decided to paint a Coke with sugar. So, next to the stove, put a glass of hot water (needed in the end). At the bottom of a deep saucepan or frying pan pour 1 tablespoon of water and pour 5 tablespoons of sugar. Put on very low heat, stirring constantly. So prepare caramel sauce (also called "the punch"). For those who have never burned sugar, describe the process in detail. It is very easy. Takes less than 5 minutes.
First, evaporate the water, the sugar has dried and will resemble in appearance salt)) Sugar can grab in clumps and a little prisohnut to the pan. Not worried. As it should be. Don't forget all the time to stir the sugar with a spatula.
Then the sugar will start to "mocrate" and melt. Continue to interfere with the shoulder blade. At this point all the lumps melted, sugar stops sticking to the pan and starts to darken.
It darkens very quickly! It is important to bring it to black. As soon as I saw that our syrup stained a dark brown color, blisters - immediately pour a glass of hot water. Pour carefully, as the mixture hot, and it "psycnet" (so you are not burned by the spray). Water for us to ensure that the mixture is not frozen, but remained liquid. Boil this mixture on high flame for 20-30 seconds and turn off the heat. All. Coca-Cola brown "color" ready. By the way, don't worry, the pan is perfectly clean after crispy Cappucino))
Very carefully wash citrus! Even better to hold in warm water add 2 tsp of baking soda for 5 minutes, then wash with a brush. Remove the zest with a knife or trowel a very thin, not touching the white, bitter layer of the fruit.

Zest, 3 cinnamon sticks (or 1 tsp ground), 2 tsp coriander seeds (or 1 teaspoon ground), 1/4 teaspoon nutmeg and sugar, pour a liter of boiling water, boil for 1 minute. Add sugar at your discretion. In shop Cola sugar at all crazy a lot of 1:2 with water! We so do not need much))
Turn off the heat. Our orange liquid pour the citrus juice, add vanilla extract (sold everywhere in small cones, very inexpensive) and add "color". Now coffee... to be Honest, was not originally planned to add it, although caffeine is present in Cola production. Tasted the syrup and decided to add some coffee. With them the stake is more similar to Coke, it appears that special flavor. If you do not drink coffee or don't give the kiddies - you can not add, still is delicious. I poured 2 tablespoons of ground organic coffee with boiling water (150 ml) for 10 minutes. Strain, poured coffee syrup.
Our cool syrup and leave to infuse in the fridge for a few hours (overnight, for example). Then strain. Output: +/-1,5 liter of syrup. Served this way: the glass is half filled with syrup and the other half sparkling water. A piece of ice is welcome)))
