Chutney orange and celery with buckwheat pancakes
Chutney is a traditional Indian condiment, with spicy or sweet and sour taste. They usually are in addition to neutral flavor. I suggest You to make a fragrant chutney celery and orange and serve it with buckwheat pancakes! An unusually vibrant mix of culinary traditions of different countries!

Ingredients

  • Orange

    1 piece

  • The Apium graveolens Dulce

    3 piece

  • Onion

    1 piece

  • Garlic

    3 tooth

  • Coriander

    1 tsp

  • Mustard seeds

    1 tsp

  • Paprika sweet

    0.5 tsp

  • Curry

    0.5 tsp

  • Ginger

    0.5 tsp

  • Sugar

    1.5 Tbsp

  • Salt

    3 pinch

  • Sunflower oil

    1 Tbsp

  • Nutmeg

    1 pinch

  • Buckwheat flour

    3 Tbsp

  • Wholegrain wheat flour

    4 Tbsp

  • Serum

    1 cup

  • Sugar

    0.5 Tbsp

  • Salt

    1 pinch

  • Soda slaked vinegar

    1 tsp

Cooking

The process of making chutney requires more time, so will start with it. Orange peel and films. Cut into small pieces.

Stalks of celery to clean the membranes. Finely slice.

Onion peel and grate on a coarse grater. At this stage it is already possible to put a pan to heat on a medium heat.

Garlic peel and finely chop.

Coriander seeds and mustard grind in a mortar. Since I don't have it, at a cost of improvised means - a container for cooking eggs in a microwave, and an old wooden potato masher :)

Spices to be heated on a dry pan, stirring occasionally to avoid burning. After 1 minute add the butter.

In hot oil put the onion and garlic and lightly fry.

Add to the pan celery and oranges and sauté for 2-3 minutes.

Add to the pan the water, so it lightly covers the vegetables. Add sugar, salt, black pepper. Simmer 30 minutes, periodically adding water to the chutney doesn't burn. If you like spicy, can add red pepper, Chile, or increase the amount of ginger.

Now for the pancakes. They are tight inside, more like bread and are the perfect accompaniment to chutney. Serum heat but do not boil. Dissolve in it the sugar and salt. In a container with serum sift the flour, knead dense dough. Leave at room temperature for 15-20 minutes to allow the gluten in whole wheat flour "intensified". If you use flour, you can bake immediately.

After 20 minutes, add to the mixture of slaked soda and mix thoroughly. The pan put on medium heat.

Pour into a pan a little oil. Spread 1 tbsp of dough (no slides) and spread with a layer thickness 5 - 7 mm.

Bake pancakes on medium heat under a lid for 3-4 minutes on each side. By the time when the pancakes are ready, flavorful chutney will also reach the desired consistency. Ideally you want the sauce has rested at least overnight so the taste was more intense, but you can eat it at once.
