I saw the recipe for this bread in one television program, decided to prepare and share with local cooks. Try to bake Uzbek puff bread with a flavorful cheese, it's not as difficult as it might seem at first glance.

Cooking
From flour, 2 eggs, salt, with the addition of cold water (to the eye) knead quite stiff dough, knead vigorously for 10-15 minutes until smooth. Cover the dough and leave to rest for 30-40 minutes.
Roll out the dough thinly, brush with melted ghee (highly recommend the butter from this recipe http://www.povarenok .ru/recipes/show/234 13/), if there is no oil, you can replace the margarine. Normal butter in this case is not suitable - it contains too much moisture. Cheese to grate on a coarse grater and generously sprinkle a layer of dough. At this stage you can add chopped greens. Cut the dough into 4 equal-width strips.
Roll one strip into a roll, put it at the beginning of the next strip and continue to roll the snail.
Continue to fold the roll until all the dough.
Turn the roll vertically, will preplanned it thoroughly and leave to rest for 15 minutes. Meanwhile, preheat the oven to 180 degrees.
With your hands (or with the help of a rolling pin - whatever you like) mash our snail to the state of the tortillas, place them on a greased parchment on a baking sheet (I use a silicone Mat, so do without oil), grease with egg, pinned with a fork, sprinkle with sesame and Nigella. My cake turned out the whole pan in diameter of about 35 cm. Put in preheated oven and look forward to 20-30 minutes.
