Description
Parkin is a traditional Scottish gingerbread oatmeal and molasses. This amazing cakes, its structure resembling the delicate cupcake and the carrot, like both the cupcake and gingerbread. The name comes from the diminutive-laskat alnogo Peter (Peter). The history of this carrot tied to king James I, who in 1605 planned attempt led by guy Fawkes. The assassination did not take place, guy Fawkes was caught. But since the night of November 5 in the UK have a tradition of bonfires on which to burn an effigy of conspirator guy Fawkes. This night is called" Night of fire". After burning effigies of the British enjoy eating this oatmeal cake. Recipe adapted by me under modernity.

Cooking
As the description of the recipe I'm going to tell you about the changes I've made to a classic recipe. So, the original need is oatmeal and wheat flour in equal amounts. With wheat there is no problem, but the oatmeal I made from of Hercules "Mistral", pitch it in a food processor
Then the original need molasses, or molasses, 450 Molasses to find just unrealistic, so I replaced the brown sugar and honey. And another point - the amount of honey+sugar I reduced to 310 grams. Otherwise it would be veeeery cheesy, in my opinion. But then it is up to you with the amount of sweets - once again, the original recipe syrup 450 g, i.e. honey and sugar need to take in 225 g (if you replace the molasses) so pour in a saucepan milk, add the butter, honey and sugar and put on the minimum fire for heating. Oil and honey should be melted, sugar is dissolved, gently stirring the mass. Do not heat above 60 degrees!
In a bowl, mix wheat flour and oatmeal, add the ginger powder and baking powder
To drive in the egg Cup and begin to pour the milk-butter-honey mixture, stirring
Here is the dough should look. It is not molded by hands, but not liquid, slightly thicker batter for cupcakes
The traditional form of Parkin - square, and it will bake. The size of my shape 20*20 cm Grease it with oil and spread the dough
Put in heated to 180 degrees oven and bake until dry matches.
Although the classics of Parkin do not sprinkle with powdered sugar - I decided to deviate slightly from tradition
