A favorite appetizer of eggplant from aunt Tanya
This appetizer for many years. Tried it I visiting her aunt. And since then it has taken root in my family. Appetizer is the perfect complement to garnish. But I love just to put a crust of fresh bread and enjoy) With a minimum quantity of products-the result is stunning.

Ingredients

  • Eggplant

    4 piece

  • Carrots

    1 piece

  • Onion

    1 piece

  • Garlic

    2 tooth

  • Mayonnaise

    2 Tbsp

  • Vegetable oil

    5 Tbsp

  • Salt

    0.5 tsp

  • Black pepper

    0.333 tsp

Prepare the vegetables: wash, peel.

Carrots grate on medium grater, onion and eggplant cut into cubes.

Put the vegetables in a hot pan with vegetable oil. stir, cover and small fire stew for 20 minutes. Do not add water! Don't forget to mix from time to time. After 20 minutes, sprinkle with salt and pepper and simmer for another 3-5 minutes.

Then add mayonnaise and pressed garlic, stir. cover with a lid and simmer for another 5 minutes. Once you need to stop, otherwise it will burn
