Pumpkin soup with curry
The abundance of pumpkin dishes, soups in particular, are very large. However, soup curry I have not yet seen. The recipe is simple and taken from the book by Julia Vysotskaya. Moderately thick, perfect for kids and weight watchers.

Ingredients

  • Pumpkin

    1 kg

  • Onion

    1 piece

  • Butter

    3 Tbsp

  • Olive oil

    1 Tbsp

  • Cream

    100 ml

  • Broth

    1 l

  • Curry

    1 tsp

  • Parsley

    1 handful

Onions coarsely crumble.

From pumpkin to remove the seeds, peel and cut into large cubes.

Fry the onions until transparent (do not bring to Golden color), add the curry, mix well.

Add the pumpkin to the onions, simmer 1 minute, stirring occasionally. Continue to add broth or boiling water and cook soup until cooked pumpkin (30 minutes).

To blend the soup. To make it better in the pot, so as not to stain the plastic blender bowl.

Add the cream, salt to taste, mix well.
