Description

Veloute of pumpkin
Veloute is basically a cream soup. Tender texture, bright colors, the aroma of pumpkin and Provencal herbs - a fairy tale!

Ingredients

  • Pumpkin

    500 g

  • Potatoes

    250 g

  • Onion

    1 piece

  • Garlic

    1 tooth

  • Seasoning

    0.5 tsp

  • Water

    300 ml

  • Cream

    200 ml

  • Salt

Cooking

Onion cut into cubes and fry in a pan with hot butter.

Pumpkin peel and cut into cubes, also fry in oil.

Garlic cut into small cubes and gently warm in a pan with oil.

Add all the above prepared ingredients into a small pan.

Peel the potatoes, cut into cubes and add to the pumpkin.

Pour the cream and

water. The liquid should cover the vegetables, but no more.

Season with salt and pepper and stir.

Add the herbes de Provence. It's not for everybody. But the scent is gorgeous. Only, next time I will shred the grass.

Put on the stove, bring to a boil and cook until the vegetables are tender (they should be slightly soft after boiling). Closer to readiness, to interfere, so it doesn't stick.

When ready, beat with a mixer or blender.

Decorate and serve.
