Recently, my mother came from England and brought delicious pastries. Then it was cakes, because I didn't know her name (and on the box I didn't even look, thought, already when the box was discarded). On the palate, it was similar to shortbread, with a very delicate structure and a butter-cream flavor. But cookies I could not tell, for in form it was like the pie. We ate it all in one sitting. Well, of course, the is that we read, but... the proportions that were not specified. And so last week I downloaded a book on the Internet (something to do with pastries) and saw this yummy. This sweets is called shortbread (oil biscuits). In England this dish is baked generations. And the secret is... butter. It must be very salty!!! good quality. And this shortbread I dedicate our cook Masonite (Eva Grimm).

Cooking
Mean: for these biscuits (we call it so) have salted butter. It can be bought in the store (probably), and you can make your own. I just took the softened butter I added 1 tsp. (a little riding) and salt are well mixed. Well, the oil itself should be of good quality (which is very doubtful, though it's not cheap).
On in butter, add sugar, mix well. Then the sifted flour and quickly knead dough (flour I added, not all at once, because it seemed to me that 500 grams is a lot, but.. is gone I have it all). The dough will be crumbly.
Ready put the dough in the fridge for a couple of hours. Then divide the dough into two parts. Round shape (I have the bottom of a split form 26 cm in diameter) grease with butter, sprinkle with flour and roll out her dough. A little form to take not recommend, because the dough is rolled out thinner after the baking is delicious.
Now on top of the blunt side of a knife to inflict these cuts (but not cut to the end, then after baking on these lines, the pieces will break off) horse (seen in the photo). Before planting in the oven brush with beaten egg yolk. Here is but.. cookies, imported from England, no yolk was not greased. So, you can not smear.
Bake at 180-190*With about 20-30 minutes, until light brown. Remove from the oven and still hot sprinkle with sugar. And allow to cool. Before use break lines (break great).
