Spanish croquettes
Authentic Spanish croquettes - it's actually fried thick Bechamel, a small appetizer, crispy on the outside and tender, soft on the inside. This is the favorite of Spanish children, and none of the children's table is complete without them. Convenient because they can (and should) be prepared in advance and frozen, so they will be better to roast and will retain the shape. In the croquet ground, you can add ham, bacon, vegetables. For this recipe I chose a favorite of many combination of chicken, mushrooms and cheese. Croquettes is perfect for a buffet table.

Ingredients. For this recipe, perfect for Epic MK Belebey cheese with a creamy taste.

Chicken breast cooked with carrot, onion (1 PCs.), greens, celery, and Bay leaf, peas of black pepper. Salt the broth to taste.

Melt the butter on low fire. Cut the remaining onion into small cubes and sauté in oil until transparent.

Add to the frying pan to the onions, finely chopped mushrooms, salt and pepper to taste and cook for another 5-7 minutes.

Add the flour and heat over medium heat, stirring constantly, 2-3 minutes. The mixture will become dry, crumbly and brown. Have to take the pan off the heat and gradually stir in the milk. Stir well. Then pour 2-3 ladle of chicken broth and stir, the mixture should be fairly thick.

Chicken fillet dismantle the fibers.

Croquet to cook the mixture, stirring constantly, to evaporate the liquid, and the mass thickens b 6-7 minutes. Add the chicken, check for seasoning.

Put the mixture in a container and put into the fridge overnight.

Repeat with the remaining mixture. You should get about 25 croquet.

To prepare the breading - flour, beaten eggs, breadcrumbs all in separate bowls. Yesterday's best baguette, ground in a blender or Japanese "Panko".

Roll croquettes in flour.

Then in eggs and in crumbs. Put on laid paper baking sheet and put into the freezing night.

Fry the croquettes in oil until Golden brown and place on napkin to stack the excess fat.
