Khrushchev scones with jam
Why "Khrushchev"? - you ask... Yes, because to prepare them, we'll be ageless from the Khrushchev dough. Say that Nikita's very fond of cakes of a similar test! And he, as you know, the choice was large enough... So, plunging into the world of yeast dough, you realize how versatile it is!! For a small period of time I learned a lot of techniques to prepare... today's muffin is another of my love! And all because this dough is very similar to the French brioche! But there are some nuances that I'm sure will tell you... go!

Ingredients

  • Yeast

    8 g

  • Sugar

    80 g

  • Milk

    250 ml

  • Margarine

    200 g

  • Chicken egg

  • Vanilla sugar

  • Salt

    0.5 tsp

  • Powdered sugar

Prepare the dough. In a warm (not hot!!!) milk dissolve sugar and yeast! Gently mix a wooden spatula, so there is no lumps.

Cover the dough with a clean towel and set aside in a warm, draft-free place for 15-20 minutes, to form a yeast 'cap'. The photo clearly shows how active the yeast is launched into action!

The dough should be mixed with the egg and softened margarine. Recall that these components need to take out of the fridge so they were at room temperature.

Sift 2 times the flour, add the pink salt and baking powder! Pink salt works very well in baking and desserts, so I try to use it! She has a delicate and subtle taste that is brighter and accentuates the sweetness of our muffins. Baking powder... Yes, Yes, Yes! I was not wrong! Argue that Khrushchev dough can be stored in the refrigerator for up to 2-3 months!!! I have not tried it, because I will not recommend! But on day 3, the test appears sour smell, and so, to avoid this, we add a leavening agent that neutralizes it! This dough can be prepared ahead, and use the right amount for pizza or pies! And every day on your table will be fresh bread baking!!! Very convenient! But it seems to me that the trick with the baking powder very well affect the consistency and the active growth of the test! It becomes incredibly soft and airy! Try it!

So, gradually mixing in the flour mixture, knead a very soft dough. I do not recommend to add large amounts of flour, if it seems that the dough sticks to the hands... very soon it will start to come off and be soft, shiny and plastic.

Very gently laid it in a bowl of appropriate size (it will increase in volume by 2.5 times) and wrapped in cling film, put into the fridge for at least 4 hours, preferably overnight!

Divide the dough into 30 equal parts and each of them formed into a ball. While working with one of them, the other cover with a towel to dry.
