Turkish lentil soup with mushrooms
"Mercimek corbasi". The taste of red lentils are delicate and soft. Red lentils contains precious vegetable protein, fiber, low fat, omega-3 and omega-6 fatty acids, b vitamins, folic acid, phosphorus, iron, magnesium and calcium, which is especially needed in the post.

Ingredients

  • Lentils

    200 g

  • Water

    1 l

  • Olive oil

    100 g

  • Onion

    1 piece

  • Carrots

    1 piece

  • Salt

  • Mushrooms

    200 g

  • Greens

Cooking

Lentils, rinse.

Chop the onion, mushrooms (if fresh), grate the carrots on a grater.

Preheat the frying pan, pour oil, add onions, carrots, lightly fried, add the mushrooms and fry all together for 5 minutes.

Add the lentils, cover with water and cook on a slow fire with the lid closed for 15 minutes.

At the end of cooking add salt, pepper, mint and cook for another 1 minute. Blend in a blender. Pour into bowls. Serve with croutons.
