Mackerel marinated with cranberries
Marinated fish with berries are very popular in Scandinavia, especially herring. Try it, it's very unusual but very tasty. I think with lingonberries or black currants would be great too.

Ingredients

  • Mackerel

    2 piece

  • Bow white

    1 piece

  • Cranberry

    100 g

  • Water

    100 g

  • Brown sugar

    1 Tbsp

  • Salt

    1 tsp

  • Vinegar

    4 Tbsp

  • Sauce-marinade

    2 Tbsp

  • Pepper pink

    1 tsp

  • Black pepper

  • Dill

  • Bay leaf

  • Allspice

    2 piece

Cooking

Mackerel should be frozen.

In a saucepan, mix water, vinegar, sugar and salt. Add the allspice and pink pepper, Bay leaf. Heat the salt and sugar have dissolved.

As soon as the marinade comes to a boil, add cranberries and teriyaki. Mix gently so the cranberries remain intact.

Slice the onion half rings, add to the marinade. Bring to a boil, remove from heat and cool completely.

Frozen mackerel cut off the head and tail.

Remove the innards, it's easy to do when frozen. A teaspoon with a sharp tip to scrape the black part at hrebta. Rinse under running water.

Marinate 5-6 hours, from time to time to shake the fish has to be marinated evenly.

To get the fillets from the marinade, cut into equal pieces diagonally and serve. If desired, the remaining fillet can be folded in a jar, sprinkling layers fish cranberries with the onions, pour the remaining marinade and place in refrigerator (if there is anything left:))
