Canned Ratatouille
If some have decided that I killed the great French chef, they are mistaken! Ratatouille is the best that can be made from peppers, zucchini, eggplant and tomatoes with onions. I decided this dish to save for the winter.

Ingredients

  • Eggplant

    3 kg

  • Zucchini

    2 kg

  • Tomato

    2 kg

  • Onion

    0.5 kg

  • Pepper

    1.5 kg

  • Chili

    0.5 piece

  • Black pepper

  • Sugar

    5 Tbsp

  • Salt

    4 Tbsp

  • Vinegar

    5 Tbsp

  • Mayonnaise

    2 pack

  • Tomato paste

    1 cup

  • Vegetable oil

    0.5 l

  • Garlic

    3 piece

Cooking

Eggplant whole to boil for 5-6 minutes in salted water. Remove. Cool.

To save time, in the same water boil until tender, peeled and sliced large courgettes. Drain the water.

...all the spices, seasonings and bulk supplements except garlic(!) Simmer for about two hours, stirring occasionally so as not burnt.

At the end of the time add crushed garlic and stew for another 10-15 minutes.

Further, according to the desire. Some can hot to put a snack in banks and roll up quickly, wrap. But I want to sleep and not wait for the explosion, because the stove is turned off, Ratatouille loaded into 0.5 l jars and put the sterilized in hot (!!!) water for about 20 minutes. Rolled and put upside down to cool.
