Cooking
To prepare the meat. Rinse, to release the membranes and veins, if any. On a plate mix a little fine salt, and peppers.
Garlic (3 cloves) peel and slice on a small plate. Roll in mixture of peppers and salt.
Lard the meat with garlic.
RUB the remaining mixture of salt and peppers.
For the marinade, mix the mustard, honey.
Add brandy. Burn is not needed ;-) :-)
The meat is placed in a container with the marinade. Leave at least an hour, up to 4. Is - 2 hours.
Through some intervals of time, flip the meat so that the marinade is "penetrated" in all its parts.
Meanwhile, peel the potatoes (or as I have a young, thoroughly washed), cut into slices, boil until soft in salted water.
The meat is marinated. In a pan heat the oil. Fry the meat in it on all sides, literally by the minute on high heat on each side.
In the marinade that was left from the meat, put the potatoes.
Spread a baking sheet with foil. Bow clean, cut rings. Stacked in the center, creating a sort of cushion for the meat. On the bow, put fried meat.
To the potatoes add the remaining garlic.
Put the potatoes next to the meat. You can add some coarsely chopped mushrooms (but it's optional, I've had a bit here and added). Bake all in preheated 190 degrees oven for 40 minutes (this is if you want the meat to remain pink, but if you need a full meat cooking time to increase).
Serve hot, with potatoes. And the meat itself is tasty and cold.
