Dumplings with radish
One of the few dishes that I can cook from a very young age. Dumplings with black radish and carrots. I remember from my childhood, as we sat with the whole family in the kitchen together preparing the dumplings. Dad Ter radish, mom rolled out the dough, and my grandma sculpted. And then with pleasure eat them. Well, it was good... I Suggest to you to try dumplings with radish in our family recipe.

Ingredients

  • Flour

    400 g

  • Water

    250 ml

  • Bran

    2 Tbsp

  • Salt

  • Radish

  • Carrots

    1 piece

  • Dill

    0.5 coup

Dough. In cold water, add the sifted flour, bran and salt. Once all the flour mixture is not necessary, it may need a little less or more.

Knead the dough. I proceed as follows:all the ingredients are mixed using a mixer to a single "bun", and then kneaded the dough for 10 minutes by hand.

The dough should look not very steep. Put the dough into the Cup, very slightly greased with vegetable oil, tighten with cling film and put into the refrigerator for about two hours. I usually clean at night. Honestly, I don't know what kind of processes take place there, but after the fridge the dough is obedient, soft, plastic, it is not torn and it can roll very thin. And dumplings of this dough when cooking, never apart. (well, except that one in a hundred...)

Filling. Ideally for the filling need the black radish. Though white or green be very good. Radish peel and grate on a fine grater. If a vegetable it is very vigorous, grated radish can be put in a colander and rinse with cold water until until the extra bitterness will not go away. But I kind of radish or Carrots... peel and also grate. Dill chop.
