Eggplant pickled
Only for garlic lovers!!! I am eating these eggplants in a heartbeat! Join!!!

Ingredients

  • Eggplant

    2 kg

  • Garlic

    5 piece

  • Parsley

  • Water

    50 ml

  • Vinegar

    0.5 cup

  • Sugar

    1 Tbsp

  • Vegetable oil

    0.5 cup

  • Salt

    1 Tbsp

Cooking

Trim the eggplants and boil in salted water for 5-6 minutes. Cool.

Parsley chop.

Garlic finely chop with a knife, but not to push (!!!)

The cooled eggplant slice 1.5-2 cm...

... and put in a jar or pot in layers, plump, sprinkling garlic...

... and parsley.

Everything should be tight and compact. When a Bank or other capacity is full, pour all the marinade. MARINADE: water + salt + sugar + vegetable oil + vinegar - boil and cool. By the way, if you do it in an enamel saucepan, a slight pressure on the top!!!

A delicious snack ready in a day, after standing in the refrigerator (!!!), but even better in 2-3 days. They say it is possible to store more than a month, but I did not get to check it out :-D
