Corn syrup substitute in baking honey. We know that honey cannot be subjected to heat treatment. At high temperatures the usefulness of honey is rapidly approaching zero, but the harm, on the contrary, tends to infinity. While it is possible to find the young corn, I recommend to use the recipe. The recipe is based on the availability of two ears of corn. I was preparing a triple batch. Many recipes use corn syrup. In our stores can't find him, I have not found. And here is this recipe, and the syrup can be prepared at home.

Cooking
Chop the cobs into pieces with a width of 2-2.5 cm add to the pot with a thick bottom. Pour 1.5 liters of water, bring to a boil. Put on the smallest burner, reduce to a very small fire and let simmer slowly until the liquid is evaporated by half.
It takes approximately an hour and a half. Then take out the corn, spread on a plate and eat. Strain the liquid, add 1 kg of sugar, lemon juice, vanilla sugar and salt. Put the saucepan on the fire, bring to boil, send a small burner on low heat, stir until the sugar is dissolved. Ovarium syrup by half. Periodically stir. When the syrup begins to gain strength, you will feel yourself: it will be "heavy" on the surface you see the film, and the syrup will start to gather in the funnel. Turn off and leave to cool.
Fully cooled syrup is poured into clean jars, close with lids. Can be stored in the refrigerator. However, I have no extra space, so I put in the pantry. The syrup is well boiled, so storage issues should not arise.
