This is a gorgeous jam, will win any, even the most demanding gourmet. Pears blend perfectly with the cardamom, cinnamon and vanilla in a variety of desserts, giving the finished treat in the combination of awesome taste and unmatched aroma.

Cooking
Prepare all the ingredients:
In a bowl pour cold water and add vinegar. Peel the pears: remove the peel and core. Cut pears into 4 pieces and put them in water with vinegar (whatever pear is not dark).
Break cinnamon stick in half. The cardamom pods and crush with a knife and remove the seeds (you box not to throw, they'll be in a jam).
Make syrup: in a saucepan pour the water, there de add sugar, vanilla sugar and lemon juice. Put on medium heat. As soon as the syrup boils, put the spices and cook the syrup on medium heat for about 7 minutes (removing the formed foam).
Then, get the cinnamon and put in syrup pears (with a skimmer). Bring to a boil and cook on a low flame (to remove the formed foam) 5 minutes (very gently to prevent in the middle of cooking). Leave to cool and repeat the procedure 2 more times (stirring gently with jam in the beginning and in the middle of cooking).

Ready jam is carefully put into sterilized jars along with boxes of cardamom and close the lid. Leave it to cool down. If you still have syrup, you fly it as well in a sterilized jar and close. It is perfect for pies, cakes and cupcakes.
