Cooking
Leek slice, place in pan with heated oil.
Fry gently, stirring occasionally.
Season with salt and pepper, stew no more than 10 min.
Sift flour, add salt, vinegar, olive oil.
Gradually add water, knead the dough. Knead it for 15 minutes, then leave to rest for 20 min., cover it with a towel.
Divide the dough into 6-8 pieces. Roll the dough thin enough, but without fanaticism. Salty pita in Greece is made from "rustic" phyllo dough, it is thicker than the Filo used to make baklava and other sweets.
Spread the filling on one edge.
Wrap the filling in Filo. Each "lapel"lubricating oil. The edges of the dough are folded to the inside.
Stacked in a round pan in a circle. Doesn't matter where you start from the center or the periphery of the pan. Tightly flagella top lubricated with oil and sprinkle with sesame seeds. Bake in the oven 180'C for 20-25 min.
