Pacific soup with squid
Recipe from John Warren. He cooked this soup in Vladivostok, which he visited recently. By the way, from the Far East, John was ecstatic. The soup interesting. And, even despite the fact that he had no potatoes, loved her husband. Only he doesn't understand what's in the soup. Says, kind of smells like fish, and fish can not find:))) This is one interesting soup!

Ingredients

  • Squid

    2 piece

  • Tomato

    1 kg

  • Shallots

    2 piece

  • Peppers red hot chilli

  • Garlic

    2 tooth

  • Chicory

    300 g

  • Broth

    0.5 l

  • Beans

    300 g

  • Basil

  • Salt

  • Black pepper

When I cook fish, never throw waste (tail, fins, bones and even the scales - all in the freezer, handy for the broth). That such wastes from cod with the addition of onion, a couple celery stalks, and one of allspice and cloves I made broth for soup. If you cook the soup on the water, get a lean option.

Beans pre-soak in water for 4-5 hours, then drain the water, beans, pour fresh water and boil until almost cooked. John recommends that you use white kidney beans "black eye". Ran around all our supermarkets, as luck would have it... anywhere!!! Had to take small white beans "Blanche" the company "Mistral".

The recipe calls for endive, but John was allowed to substitute with chicory or Chinese cabbage. Since endive, and chicory in our Northern climes creepy exotics, take a more affordable Chinese cabbage. It should be cut into noodles.

Also cut squid.

Tomato mixture, pour in the boiling fish broth.

Bring to a boil, add the beans and the cabbage, cut noodles. Add salt and boil for 10 minutes.

Then add the chopped noodles, squid, 2-3 Laurel leaf and boil for 2-3 minutes. By the way, fresh squid John didn't proveribal, and immediately after the addition has removed the soup from the heat.
