Indian drink
Lassi - a drink native to India. It is prepared on the basis of natural yogurt or kefir. There are lots of options: with sugar or with salt, with various spices, honey, herbs. I want to offer you one of the options for summer drink that not only quenches thirst but also gives courage. Lassi with success can replace a meal, especially when in the heat do not want heavy, hearty and hot meal. It tastes slightly sour, fresh mint and interestingly, the cucumber Lassi has its own flavor and taste. If served ready to drink, no one will know about his presence. To prepare the drink I decided to use the starter "Yogurt" by Orsika, because the composition of the dry starter culture is composed of the same bacteria, and for receiving of the Bulgarian yoghurt.

To prepare the drink I need to get yogurt, it is convenient to do using the brand thermos provided by the sponsor and the packet of yeast. The milk is heated to 40 degrees, because for start of thermophilic bacteria needs a temperature of from 30 to 50 degrees. The milk entered the dry yeast, stir for 2 minutes, then a container of milk, put in a thermos by pouring boiling water to keep the heat in the fermentation process. Fermentation lasted 18 hours, because prolonged exposure contributes to a more full-bodied flavor and additional thickness.

The willingness of yoghurt is determined by its appearance, is supposed to be a gentle bunch. Capacity with dairy product and put in the fridge to cool. Chilled yoghurt pleasant dairy flavor with a slight acidity and a characteristic density. Using dry starter cultures from Orsika, it is now possible to prepare various milk drinks, and cottage cheese. All products are guaranteed to be fresh and without the presence of unwanted additives, because in portion bags - stickers only good for the body bacteria. Conveniently, the freshest product you can prepare at home and in the country, with a minimum of time and effort.

And now prepare the infusion, it is better to do simultaneously with the fermentation of fermented milk drink, as he also allowed to stand for 8-12 hours. Ginger wash, peel and grate on a small grater. From the washed and dried mint leaves truncate. Cucumber peel, we shall cut slices. It is important that the cucumber was sliced as thin as possible, transparent slices. It is convenient to make a peeler. Lemon with peel cut into thin slices.

Put all into a jug, pour filtered (boiled) water, add the honey, stir. The pitcher put in the refrigerator.

Alternatively, honey can be added directly when mixing fermented milk drink and infusion.

In a glass pour the yogurt half on top, gently pour in the strained infusion, trying to keep the layers did not mix immediately. The proportion of dairy drink and infusion can be different, as the amount of honey. Sometimes honey is added instead of salt.

In a glass of Lassi, add 2-4 ice cubes, stir before use. And you can eat and not stirred, layer by layer.
