Cooking

step-0
In December 2013 I came across this recipe in the magazine "Home", but already in the winter did not sell any plums or figs and try this jam really wanted. And finally autumn, plum and figs was found in one counter, and I was in a hurry to make magic jam))
step-1
So, from plums remove the seeds, figs have to cut the tails with lime to remove the zest and squeeze the juice in a separate bowl. Fruit cut into small pieces, fold in a bowl for jam, add the zest of lime and 50 ml of water, put on fire below average. To cook under a lid, preventing flexing and berries for 20-30 minutes, the fruit should give a little juice and be. Then remove the lid, add spices and lime juice, gelling mixture ( 1 tbsp or more for a thicker jam), bring to boil, boil for 2-3 minutes and add the sugar. Cook until thick jam, about 30-40 minutes.
step-2
Pour the jam into sterilized jars, tighten lids and store in a cool dark place, preferably in the fridge because a little sugar. This rule I came up with 1250 ml of jam. Because I changed the proportions, it will lead to the original recipe from the magazine : - 8 large berries figs (about 450-500 g), 1 kg plum - juice and zest of an orange 1 tsp cinnamon and cloves, -1,2 kg of sugar. I reduced the sugar because figs are my sweet, in General the choice is yours on what proportions to cook.
