Tomato relish with zucchini and peppers
Relish is a hot, spicy, sweet and sour sauce with vegetables. Sometimes it is added the fruit. Relish is perfect as a seasoning for meat, fish, fondue. Add it to salad dressings gives these stations the originality and piquancy. Especially delicious with relishes salads with poultry and rice.

Ingredients

  • The juice of a freshly squeezed

    1 cup

  • Zucchini

    1 piece

  • Pepper

    1 piece

  • Onion

    1 piece

  • Garlic

    2 tooth

  • Vegetable oil

    2 Tbsp

  • Vinegar

    100 ml

  • Sugar

    50 g

  • Salt

    1 tsp

  • Pepper Cayenne

    0.25 tsp

  • Coriander

    1 tsp

  • Ginger

    1 tsp

  • Raisins

    2 Tbsp

  • Allspice

    0.5 tsp

Vegetables wash, peel. For relisha no need for "jewelry" slicing vegetables, cut arbitrarily, "country style", diced bell pepper, zucchini, onion and garlic.

Take the skillet or pan with a thick bottom. In butter until soft fry onion a few minutes.

Put the zucchini, garlic and bell pepper, stir.

Add washed sultanas and grated ginger root.

Add salt, sugar, Cayenne red pepper, coriander, allspice (cloves) pepper.

From ripe tomatoes through juicer make fresh tomato juice.

Pour tomato juice over the vegetables, stir and simmer over low heat, stirring occasionally, 30 minutes.

Ready relish (sauce) you can use chilled immediately upon appointment.

You can close boiling into sterilized jars, cover with blanket to cool down and kept at room temperature for up to 8 months. Of this amount, I got 1 litre of finished sauce.
