Here is Ivan-tea in the flowering period!
Here are the sheets! It should be noted that even before the beginning of flowering you can begin to collect the young leaves! They have a very delicate floral scent!
Collect the leaves on a clean area. To collect use the bag as the tea pickers, with the strap over the shoulder! It is made of cotton fabric, with good capacity! You can collect in a basket that someone more convenient! House of leaves is sprinkled on the table, covered with a cotton cloth. Here in the photo, you can see that the leaves are not wrinkled and not damp.
As the leaves collected the day after a rain, then I do not mine, but just sorted, with a visual inspection. If you need to wash that, then, leaves have to dry on the fabric.
To start the fermentation process necessary to violate the integrity of the leaves. Traditionally, they fray, it is possible to see and read in other sources. Here we will talk about the granulation. In a meat grinder ring set with large holes (10 mm) and scrolled leaves. Get these granules! At this stage the air around is filled with a magical flavor!
Now the leaf is a bright green color and a pleasant aroma! Put the resulting mass in convenient container (not metal). I have a plastic container suitable for food products. Cover with a damp and wrung out cotton towel or a cotton cloth in 2 layers. It is desirable that the fabric was dense, so it will long remain wet. If it is dry, then again wet, wring out and cover. Yet we must remember that the fabric will be stained from the green.
Carefully cover the whole mass is pressed against the hands over the entire surface and edges, and leave to ferment in mounds. Usually, it takes time from 20.00 till 10 am.
During the fermentation process the color of the granules changed. After 14 hours they become dark green. The aroma became too intense and more fruity.
You can start drying. On the grid, rolling out the parchment paper on it and spread the granules in a single layer. If the paper lay on a baking sheet, it will be necessary to consider heating it and stirring from time to time. Set the oven temperature - above 60 degrees. And dry about 1 hour.
Remove the bars from the oven, remove the sheet with granules and leave to cool. And the oven is sent the next batch. If any granules not completely dried out, then, after cooling to dry in the oven for 10-15 minutes.
The cooled granules pour into suitable containers. It is best to store in glass, tightly closed cans. And if a lot of tea, then conveniently stored in canvas bags.
Suitable for drying and flowers Ivan-tea. Them to dry well in a shaded and well-ventilated place. Dried even a small trial batch of green pellets! But still, for green tea better to dry the leaves, not pellets. Here, all three types of blanks in front of you!
Well dried tea is the color of this black tea. Its aroma is more intense and strong. It should be noted that this plant does not contain caffeine and oxalic acid! The longer Ivan-tea is kept, the better the quality and flavor! Marketable condition tea reaches approximately one month. But you can brew at once! What we'll do!
Black granular fermented Ivan-tea is best brewed this way: 2 teaspoons of granules pour 300 ml of boiling water ( or hot water 85 degrees) and leave for 30 minutes.
The tea is delicious by itself, but it will be richer and healthier with ingredients - sea buckthorn, with dried rose hips or hawthorn! Very good brew Ivan-tea with blueberries and other fresh berries! Brewing tea with fresh berries, it is necessary to wrap up the teapot. Ivan-tea with sea buckthorn, wild rose or hawthorn good brew in a thermos. And infuse for 30 minutes. Therefore dried berries can brew and give all the benefit! For sweetness, you can add dates, cut into 1-2 things! Very good this tea and dried cherry sheet! Try it!
