Appetizer vegetable with eggplant
A delicious snack for the winter, and so a great vegetable dish.

Ingredients

  • Carrots

    1 kg

  • Onion

    0.5 kg

  • Pepper

    0.4 kg

  • Eggplant

    0.4 kg

  • Tomato

    0.5 kg

  • Vegetable oil

    2 cup

  • Salt

    2 Tbsp

  • Sugar

    1 Tbsp

  • Vinegar

    1 tsp

  • Zucchini

    1 kg

Vegetables are washed,cleaned, cut into arbitrary pieces. The carrots and zucchini in the grater.Cut eggplant and soak in salted water for 10 minutes,then drain the water!

All the ingredients except the vinegar and oil are laid out in the pan and adjust to the impact of juice 5 minutes. Then put on a slow fire and stew for an hour with constant stirring.

Added the oil and stew for another 15 minutes. Then at the end for 3-4 minutes until cooked add the vinegar. Spread into prepared hot sterilized jars, cover with lids and wrap it up for 8-12 hours.
