Finally I decided. This is my debut on the site. I'm not a guru in cooking, but still want to share the recipe. I'm not a fan of thick jam, but the juice is not what I would like. This Golden slices of quince in syrup. Very good use later in baking, to spread on shortbread pies, tarts. I like it just for the homemade bread putting and with tea. What you need in a cold cloudy days. It's like a piece of the sun in a jar.

Cooking
Quince wash, well dry with paper towel, cut the core with seeds, flesh cut into slices.
Add to the pot or bowl and cover with water so that it just lightly covers the quinces. Put on fire, bring to a boil and cook over low heat for 10 minutes.
Drain in a colander or remove with a slotted spoon slices of quince, the liquid to leave.
Take 1 liter of liquid from the quince and 1 kg of sugar. At this stage you can experiment who loves viscous, liquid can take 600-700 ml, the amount of sugar can also be reduced. Cook the syrup, add the cinnamon.
Then gently add the syrup boiled slices of quince and cook over low heat for 15 minutes, periodically removing the foam.
Then pour the lemon juice and cook for another 5 minutes.
Banks pre-wash with baking soda and sterilized, to prepare the cover. Quince lay on the jars, pour the syrup and roll up. I got 3 half-gallon jars. Bon appetit and tea!
If you still have the syrup, you can make a delicious quince jelly by adding gelatin.
