Cooking
To start dried fruit and raisins should be washed thoroughly and let the water drain out. Grate the zest of one lemon and one orange, grind the nuts, apples and carrots grate on a fine grater. In some recipes I've seen add juice of one lemon. By and large, small deviations in the composition of products in the direction of Your preference is acceptable.
In a large bowl, mix all the raisins, currants, chopped candied fruits, nuts, dried apricots, peel, cherries, grated Apple and carrots. Mix thoroughly with a spoon.
Then add sugar, a pinch of salt, eggs, flour, crumbs, softened butter, brandy (or cognac), aromatic spices. At this stage it is better to mix by hand.
The form in which to prepare the pudding should be thoroughly coat with oil. Ideally, this should be thermally stable glass form, but I don't have one, so I took a metal bowl :-) All the "dough" to shift into a form, gently but quite firmly primina hand. Put the form in a water bath. To do this, place it in a pot of larger size, but so that the small bowl does not touch the bottom of the pan. For this I used a wine cork on which the bowl is hung on the struts. Pour water in the gap between the bowl and pan.
Pudding tightly cover with baking paper.
Top cover with a tight lid, or carefully wrap the foil to brandy and water does not evaporates from the pudding. Pan put on fire, let the water boil. Reduce the heat and on low heat to cook the pudding for four hours. It is very important to monitor the level of water in a large saucepan, constantly adding it. I refilled the water seven times in four hours.
After the specified time remove the pudding from the steam bath, cover with a plate and gently turn. The prepared pudding before the ceremonial serving pour extra strong brandy and set on fire. You can use another alcoholic drink, it is important to have not less than fifty degrees of alcohol.
