Easter cake 2015
Last year I wrote that every year bake cakes according to a new recipe in search of the most tasty and perfect for my taste. This recipe I liked all the previous, really. I can confidently say that with the experiments I've done.

Ingredients

  • Flour

    2.8 kg

  • Chicken egg

    10 piece

  • Brown sugar

    600 g

  • Milk

    900 g

  • Butter

    300 g

  • Vegetable oil

    50 g

  • Vanilla sugar

    2 pack

  • Yeast

    100 g

  • Raisins

    200 g

  • Candied

    200 g

  • Lemon peel

    1 piece

  • Cardamom

    1 tsp

  • Nutmeg

    0.5 tsp

  • Cognac

    100 g

  • Egg white

    2 piece

  • Powdered sugar

    2 cup

  • Lemon juice

    2 tsp

  • Topping pastry

Cooking

Rinse the raisins under cold running water and squeeze. Pour brandy raisins and candied fruit, set aside to swell. Crumble the yeast with your hands and add 5-6 tablespoon of sugar. The milk is heated it should be very warm but not hot. Pour 1 tbsp. of milk yeast.

Stir the yeast until smooth with a fork, cover with cling film, not to incoming air, to roll up in towel, put in a warm place for 30 minutes. I put the warm battery.

Beat the eggs with the remaining sugar.

Should get a firm foam.

Butter room temperature cut into cubes, put in microwave for 1 minute, to melt.

If the temperature is high enough, after 30 minutes the dough will look like this.

Carefully remove the foil, with a fork lightly mix the dough, slightly besieged it.

Add 300 g of flour.

Mix well.

Cover with plastic wrap, to roll up in a towel, to send in a warm place for 30 minutes.

After 30 minutes, the dough will rise 2.5 times.

To shift the dough in a large container, add the beaten eggs, add 2 kg of flour, pour in warm oil, add the vegetable oil.

Mix well. Heat the milk to a boil but do not boil. Boiling milk, pour in a little batter, just mixing it. The dough will be as pictured. This procedure is long does not allow the cakes to harden.

Grind the cardamom in a coffee grinder or take it to the ground.

Grate nutmeg on a fine grater, add to the dough. Add the raisins and candied fruits, vanilla sugar, grate the zest of 1 lemon.

Now I divide the dough into three parts. One part of the leave with the amount of sugar that goes in the recipe (this is for myself, not have a sweet Passover). In the other two add more sugar to taste, because Pets love the sweet Easter cakes. Little by little adding the flour, kneaded the dough, it should be completely smooth and does not stick to hands. The less flour, the wetter will be cakes.

Cover with a film, send in a warm place for 30 minutes. After 30 minutes, oiled hands, pinch off small amount of dough and put in shape for baking cakes, filling them to 1\3.

When the dough has risen twice, to send in the oven for 40-50 minutes. Readiness check wooden skewer.

While the cakes are baked, whip with a whisk or a fork (!!!) 2 protein with 2 incomplete cups of powdered sugar, at the end of the whipping add 2 tsp lemon juice, continue whisking until the mixture becomes smooth. If you want to remove paper forms, sprinkle hot cakes with frosting, decorate as desired. Once the glaze and the cakes are cooled, store them in plastic bags. The cake is slightly wet, but very soft and light, not heavy and wet, very fragrant and tasty, crumble in moderation, long does not get stale.
