Cooking
This recipe takes far longer preparatory stage-cleaning and cutting vegetables than the actual cooking. All the vegetables are taken in equal proportions. Eggplant cut into medium-sized pieces and cover with salt, went to the bitterness.
Potato peel and cut into cubes, commensurate with the size of the pieces of eggplant.
Clean and chop red and green bell pepper (sliced same size as potatoes and eggplant). Finely chop the red chili pepper, the amount depending on Your taste.
Finely chop the slices of the white part of green onions and garlic.
Pre-prepared soy sauce from Kikkoman. Since the recipe is soy sauce mixed with sugar, it is more convenient to take the sweet soy sauce from Kikkoman. In the absence of this sauce add to the usual soy sauce, Kikkoman 1 tablespoon sugar.
Prepare the dressing in advance. Mix sweet soy sauce, corn starch and water.
Rinse eggplant of salt and squeeze.
For cooking Chinese dishes is better to take the wok, but in the absence you can take a frying pan, a saucepan with a thick bottom. Pour oil, heated. Vegetables actually need to be fried in oil, so oil must pour a lot. In the original recipe, the vegetables are fried separately, laid out on a napkin to remove excess grease, and then mixed together. But we have simplified the recipe and fry all the vegetables together. First, put potatoes, fry it until it will turn brown while continuously stirring with a wooden spatula.
Add the eggplant and fry with continuous stirring (about 3 minutes).
Add sweet and hot peppers, stir for a few minutes.
There also add chopped onion and garlic and, with continuous stirring, fry all the vegetables for 1 minute. Next drain all the oil.
Pour a dressing of soy sauce and starch, rapidly (but gently mix everything together), and immediately turn off the fire. Vegetables ready.
For serving used Chinese dish, however, do not know if the characters are inverted.
Spread the vegetables on a plate.
