Meatballs with vegetable sauce
I think many Housewives in store meatballs in the freezer. Offer to cook them a delicious and hearty autumn dish.

Ingredients

  • Meatballs

    600 g

  • Onion

    1 piece

  • Pepper

    1 piece

  • Carrots

    0.5 piece

  • Sundried tomatoes

    5 piece

  • Tomato juice

    50 ml

  • Soy sauce

    3 Tbsp

  • Eggplant

    1 piece

  • Vegetable oil

    2 Tbsp

Cooking

Onion finely chopped, pepper cut into strips, carrots grate on a coarse grater. Sun-dried tomatoes cut into small pieces. Quickly fry in vegetable oil.

Add the eggplant, cut into large cubes (I do not peel the eggplant). And cook another couple of minutes.

Add the tomato juice (I have frozen).

Pour Kikkoman soy sauce. Mix well.

Put half the vegetables in a baking dish.

Put the meatballs. Bake in the oven for approximately 40 minutes at medium heat. Can be served with rice or buckwheat noodles, or any side dish.
