Beans with ears
The beans in this recipe cook for about 400 years in Spain, in Segovia, in the tavern, which became famous thanks to this dish! At the entrance to the town stands the monument erected by grateful inhabitants of the founder of the diner - a fun loving person, giving people a dish of pigs, and as if saying: -"Eat pork, dear guests!"! So I come to you with a delicious dish famous traditional recipe and "EAT BEANS WITH my EARS, MY DEAR COOKS!"

In a small apartment on the outskirts of a provincial town, in a modest kitchen counter there was a Beans – pretty shiny from all their barrels, still quite a young lady. She had to share a small living space with other neighbors. On the same shelf with her lived her best friend-Lentils (old maid and the big gossip girl, truth be told), and solid, authoritative uncle Chickpeas, ballooning from feelings of self – worth- why, the hostess was very fond of something exotic called - falafel and hummus dishes, in which he played the main role! A little further lived his young nephew Mash grouchy, but good old Peas. Beans were not close, she loved them with all my heart. The hostess was preparing the beans are delicious, nutritious and healthy meals, but they were too simple, the everyday, and the beans wanted to play a major role in some amazing and exotic dish, simply put – she dreamed of glory. "Oh, how dull she was thinking at night, when all residents of the apartment went to bed, - bean soup. Or salad... No! Why this is happening to me – so plump, so charming, so still young and able –no doubt very capable special! That's because even simple-rice is proud that he can prepare a dish with the fashionable name of "risotto"..... And one day he boasted that today he was preparing some mysterious land. Oh! Well, when will come my time?".

And then one day her dream came true. The night before the mistress carefully lifted her from the shelf. -Well, well, well, baby, ' she murmured, - here tomorrow, you've really work! and with these words filled Fasolka cold water! - "Wai! shrilled Beans – again, probably soup of some planned mistress." Beans soaking in the pan, a bit woozy from cold water, and listened to the conversation of the mistress with her husband. It turns out that tomorrow, the owner intends to make the famous Spanish dish, which has more than 400 years and called it "Beans with ears." –All right, she thought, I know – Beans... And here it is with the ears –what's the vanguard? What they told me there is mold? What kind of ears-soup?

Bean glanced in the direction of the sink and saw what the hostess called ears. Look, frankly, Beans are not impressed, and she sighed quietly. "Well, can't be choosers – ears so ears. Still, I'm terribly unlucky" - she thought and fell asleep. The bean was sleeping and didn't know that tomorrow she will be a real success and what she so long dreamed, come true.

So, the beans soaked overnight. If possible, a couple of times a water change. Prescription ears should be cut, well washed, a knife to scrape where necessary and to throw in with the beans to cook. BUT... they're in Spain there's probably other ears –rosy and neat, and we, as they say, are fortunate that there are (truth be told, the lugs for the recipe to get it was problematic. So insanely happy that they actually found!). We cleaned, scraped, nicked, cut, especially the polluted places – and still not really left satisfied.

Therefore, prepare two pans and cook all separately. Fasolka separately, the lugs separately. When ears comes to a boil, after five minutes drain the water. With boiling beans also drained and only then connect them in a common pot. Pour cold water so that it only just covered all this wealth. Start to cut meats (all which includes, and not to skimp on this! I added grams of 300, but 400 would be good)

After half an hour of cooking, throw in the pan smoked.

Start to cut the onion, garlic, chilli pepper for frying.

After an hour of cooking, remove the ears from the pan, lovingly cut into thin strips. In a pan heat vegetable oil, add the onions, garlic, chilli, fry until light brown colour. Now, add grated tomatoes or the tomato paste diluted with broth from the pan.

So it looks nice. After five minutes of stewing returned everything back to the pot. Now, finally, you may add salt (beans are usually salted at the end of cooking), pepper, add greens!
