Caponata
Very tasty snack, but I love her more as a separate dish.

Ingredients

  • Eggplant

    4 piece

  • Onion

    1 piece

  • Chicken egg

    2 piece

  • A bouillon cube

    1 piece

  • Vegetable oil

Cooking

Eggplant wash, peel and cut into cubes.

Add two eggs and mix well, refrigerate for 2 hours.

In vegetable oil fry finely chopped onion.

When the onions are browned spread, marinated in egg, eggplant and fry, stirring constantly.

When the eggplants are browned, add chicken cube (if a little salt, then add another cube or salt), stir and enjoy! Very tasty both hot and cold. Can still (when cool), add a little mayonnaise and spread on bread. Bon appetit!
