Prepare the products. I decided to try in two versions: with prunes and dried apricots.
Grind the nuts. Better in blender, but not to the tiny pieces. But you can just chop by hand.

I decided to put together a pair: the prunes-walnuts and dried apricots with almonds, with a small number of walnuts. Combine prunes (dried apricots) with nuts, sesame seeds, star anise, orange zest and cognac.
Grind this mixture in a blender. It is better to do the immersion blender, but I only have in the form of a bowl. A tip for those who have a blender like me, better to use the grinder.
Received as a result here are two fruity-nutty mass.
Put the mass on plastic wrap and tight turn, forming a sausage. Try as it is possible more densely compacted mass, depends on how well it will hold the shape of the finished sausage.
From one portion obtained two such sausages. Teaspoon is given for size comparison.
With prunes repeat all operations. And here are our sausages are ready. Put them in a tray and put in refrigerator at least 2-3 hours.
After a few hours the sausages will harden, and can be cut with a knife. Sausage prune his appearance is very similar to salami - hence the name.
To serve, cut into pieces. Me, as a lover of dried apricots, more like a disappointment, but it all depends on your preferences and the quality of the products. It may be that the plums are not very sweet, in that case you can add in a mixture of icing sugar or sprinkle when serving.
