My most favorite thing in cooking - baking bread! No other culinary creation brings so much positive emotions as it is a wonderful lesson. And even if bread is not entirely successful, it did not happen as airy and crisp as it should, when you break off a piece, still hot freshly baked "creation," the soul is filled with warmth and happiness and returns to his childhood, when mom got out the bread from Russian oven. And if I had the opportunity to build a Russian stove at home, believe me, I would have done it. But today I want to share the recipe of Italian "sneaker", it is translated with the Italian ciabatta. I baked it using a recipe from the Internet but this was the most delicious of all cooked previously. Recipe from the wonderful book the Richard Bertin "Your bread."

The author recommends all the ingredients and even the water, to weigh in the balance, and, in any case, do not use more flour than specified in the recipe, even if You feel that the dough is liquid. The flour must be sifted, and even twice. Definitely need to turn on the oven for at least 1-1,5 hours before baking bread. Also need to warm up a baking sheet or baking stone. In short, to leave them in the oven. Also prepare a spray bottle with clean water. The day before baking bread, you can cook the starter. Why you need to combine all the ingredients for the dough and knead (I used the mixer) for 5-6 minutes. If You have fresh yeast, then RUB them with your fingers in the flour and then add water. But you can use dry. Sourdough is pretty solid, as it should be. Put the dough in a bowl, cover tightly with cling film, top with a towel and place "wander" at least 20 hours in a warm place without drafts or just in the kitchen. The film does not open! In the photo the starter after day, before use.
Now we knead the dough. I again used a mixer with a dough. Pour the flour into a bowl (or the mixer bowl), RUB or sprinkle in the yeast with a spoon add yeast, water, salt, oil. The water should be little warm. Knead the dough, if the mixer, then on second speed for about 5-7 minutes. It will become easy and supple. Oil warm (room temperature) Cup of olive oil and put in her dough. Cover with plastic wrap and a towel and leave in a draught-free place for 1.5 hours minimum. The dough will rise very much, keep that in mind when choosing a bowl. If you add supplements, add them at the end of the batch.
Turn on the oven with a baking sheet inside to 250 degrees. Let heats up and heats the kitchen. Here's (pictured) charm 1.5 hours.

Open the oven and quickly sprinkle liberally with water from a spray bottle and quickly put the pan. Now reduce the temperature to 220 degrees. Bake without opening the oven, 18-20 minutes. No more!!! Even if You think that it is not cooked (not too Golden), believe me, it's fine. If you overdo in the oven, the ciabatta will be solid.
