Description
A very simple recipe squash caviar, but tastes better, I haven't tried, as prepared my grandma, a mom, and now me. Spicy-sweet, with a garlic flavor, just melts in your mouth. Suitable as an appetizer separately and on the bread perfectly complements the first and meat dishes. Components quite a bit, but I like it in that combination and consistency.

Cooking
Zucchini RUB on a fine grater, if the skin is firm, take it off if there are seeds, too to cut. Squeeze the juice, put in an iron saucepan, add salt and on low heat cook for 30 minutes, stirring pereodicheski.
As small as you can chop the onion, grate the carrots on the carrot grater. First in vegetable oil fry the onion, then add carrots, cook for another 5 minutes, sprinkle with salt.
The zucchini is still hot, strain through a strainer so all the water is gone and add to the carrots, fry for another 10 minutes on low heat. Add crushed garlic, pepper, if necessary, more salt, and another 5 minutes deep fried.
