Summer this year does not spoil the harvest, therefore, met in the network an unusual recipe, I couldn't resist from the sample. It turned out very summery, sweet, viscous treat of exquisite color and delicate floral-honey aroma. Cooking
Collect flowers of the fireweed in the morning, once the dew has dried. The number somewhat arbitrary, not less than a glass, no more than three. Carefully sort through to remove any insects and place in a saucepan, cover with water.
Put on fire, bring to a boil. Enjoy the color changes. Boil for 10 minutes.
The flowers are almost completely discolored, the broth is not too pretty a dirty lilac color. Now it needs to cool. Can be fully can - until it's warm to avoid burns. Strain the broth into a bowl for jam, flowers carefully squeeze. More they do not want.
Pour in the broth all the sugar and boil, stirring occasionally.
Boil for 15-20 minutes, removing the foam. A drop on the plate should not be spread.
When the desired thickness is achieved - the magic begins :) Add citric acid or lemon juice. Better in parts, as much foam. And - about a miracle! - indistinct purple mass becomes pale crimson! Boil for 2-3 minutes and pour in the banks.
