Teteles: In forcemeat add bread, juice and zest, onion, garlic, oil (25 ml), mint, oregano, water, parsley, salt and pepper very well and carefully mix everything. Cover with cling film and put 1 hour in the refrigerator. Molded from minced tercedes the size of a large walnut.
Fry for 7-8 minutes, turning them over frequently in a well-heated oil.
Drain on a paper towel to remove excess fat. Can be baked in the oven, by placing tercedes on a baking sheet, covered with baking paper.
Imam Baldi: It's not quite a classic recipe, prepared not in the oven and in the pan. Apparently, this method of preparation was provided for a very hot time! Eggplant (I have thin) and fry in well heated oil in a saucepan with a thick bottom.
Add the onion and garlic, saute 2-3 min.
Add the tomatoes, sugar, salt and pepper, bring to boil, reduce the heat and simmer for 30 minutes until almost all the liquid evaporates. In the end, add the parsley.
It tastes best to serve this dish cold.
