Bake different pancakes and crepes, but these crepes - my favorite. So baked my great-grandmother, and the taste of these pancakes are dearer to me than all the sweets.

Cooking
First, make the dough. In two cups of warm milk bred yeast, add 3 cups of flour. All mix well and put to rise in a warm place for 30-40 minutes.
At the expiration of this time the dough should increase about 2 times, it added salt, sugar, melted butter, mashed yolks (pre-separate the yolks from the whites), the rest of the flour, stir and gradually pour the remaining warm milk. Stir everything up well, you can with a mixer, as the dough is not thick, cover with a clean towel. And put to use (to increase the test 2 times).
The dough abenaim and set to walk again.
As the dough grows a second time, whisk the whites in a solid foam and add to dough, mix and leave for 15-20 minutes.
Bake pancakes on the heated pan (preferably with thick walls, cast iron), greased with vegetable oil, on both sides.
I baked a pancake smeared with butter and sprinkle with sugar. To say "delicious" is an understatement. Congratulations to all of carnival!!!
